There’s a distinct group of people that strongly believes that the cure to all world problems is cheese. We feel kind of compelled to mostly agree. In these days, claiming that you don’t like the golden wonder is as traitorous as putting a knife in the back of your Roman leader father. #1 Spicy Fonatina Queso Fundido

There are a lot of fancy terms and names into this one name and, beware, there are even more of those crammed in the title of the original recipe. This one combines homemade ravioli with a delicious queso recipe to dip them into.

Ingredients:

  • 1 pound fresh pasta dough
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced or grated
  • 1 jalapeno, seeded + chopped
  • 1 pound ground chorizo
  • 1 tablespoon tomato paste
  • 1 teaspoon chili powder
  • 10 ounces frozen chopped spinach, thawed

#2 Queso Fundido with Shrimp & Tomatoes

  • 7-8 ounces chorizo, casings removed
  • 2 tablespoons butter
  • 2 tablespoons cornstarch
  • 1 (12-ounce) can evaporated milk
  • 2 ounces cream cheese
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 1 (4-ounce) can Old El Paso chopped green chiles
  • ½ cup diced tomatoes
  • ½ teaspoon salt, or more/less to taste

Ingredients:

  • 1/4 cup olive oil
  • 3-4 chipotle peppers (from adobo sauce)
  • 1 tablespoon adobo sauce
  • 3 cloves garlic
  • 1 lime, juice only
  • small handful of cilantro
  • pinch of salt
  • 1 pound chicken, sliced thin and marinated
  • 1 red pepper, sliced thin
  • 1/2 red onion, sliced thin
  • 2 Serrano peppers, halved
  • 2 tablespoons olive oil
  • 8 ounces cheddar cheese

#5 Beer Braised Chili Cheese Nachos

Yes, in retrospection, this is just nachos with some cheese and minced meaty deliciousness, but it actually does take a lot of ingredients to prepare this particular snack. You take just one look at the way the cheese clings to the nacho and you know all is right in the world.

Ingredients:

  • 1 pounds ground beef chuck
  • 1 cup whole peeled tomatoes and juice from can
  • olive oil, as needed
  • 1 tablespoon oregano
  • 1/2 white onions, sliced
  • 1 clove fresh garlic
  • 1 tablespoon ground cumin
  • 1 bottles beer
  • kosher salt and fresh black pepper, as needed
  • 1 cup chicken broth
  • 1 whole Roma tomato
  • 2 cups shredded cheddar cheese
  • 1 avocado
  • 1 tsp fresh squeezed lime juice
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 jalapeno
  • sour Cream

#6 Chipotle Chicken Cups

Last but not least, there are few people who can claim that they dislike Chipotle (and get away with it), which is why it’s safe to assume that queso goodness is double the trouble when you throw the iconic Chipotle in the mix. It’s even more appealing when it’s so cute-looking and aesthetically pleasing!

Ingredients:

  • 24 wonton wrappers
  • 1 cup shredded cheddar-Jack cheese (or other favorite cheese)
  • 1 cup cooked chicken, shredded or small-diced
  • 1/2 cup roasted red bell peppers, diced (from the jar works well!)
  • 1 cup favorite salsa
  • 1/2 tsp. chipotle powder
  • 1/2 cup chopped green onions
