I’ll just go ahead and say it, to get it over with: rice is the most versatile food in the world. You can do so many things with it, mainly because its taste is quite bland and it can be combined with almost any vegetable in existence. We’ve looked at some ways to cook potatoes and today we’re going to look at 10 ways to cook rice. Just make sure you’ve got something to eat while reading because this is going to make your mouth water like crazy.
Before we start, you should know that in almost all of these dishes, the rice added is boiled and cooled in advance. In order to make great, fluffy rice, it is very important to boil it in advance, not for long (the cooked grain still needs to be a little hard; it needs to have the center of it a bit uncooked, just like in the picture above). Cook and cool your rice before adding it to dishes, it’s the best way to cook with rice.
Another thing before we proceed: you should know that the ways to cook rice below are just ideas and not recipes. You can use whatever is in your fridge or whatever vegetable or spice you like. There are just suggestions that are meant to inspire you and leave you craving the best grain in the world: rice!
10. Rice Milk
If you’re a vegan then you’re already in love with all types of vegan milks that are available on the market. Rice milk is absolutely great, because it’s easy to make at home and it’s delicious. There are various recipes online, that’s why we won’t give you one in particular, but we are going to tell you this: use brown rice for your milk to make sure you’re benefiting from all of the rice’s goodness.
9. Spice Rice
Spice rice is delicious and easy to make and you can use your favorite spices while you’re at it. Fry an onion and one garlic clove, add one cup of boiled rice and then when all the oil and juice has been absorbed by the rice, add your favorite spices and fry it some more, until it is crispy and golden. My favorite spices with rice are turmeric, garam masala, asafetida, amchoor (raw mango powder) and Chinese five-spice (which goes great with rice and peas, which is a whole other story).
8. Rice Noodles
Rice noodles are good with everything. And when we say everything, we actually mean everything. You should add them at the end of the cooking process and make sure that there are plenty of juices for them to absorb. Soy sauce + rice noodles = love!
7. Brown Rice Salad
A brown rice salad is very refreshing and filling at the same time. My favorite recipe is the following. Half a cup of boiled brown rice, two ripe tomatoes, a handful of green olives, fresh parsley, red onion, olive oil, salt and pepper, everything doused in lemon juice. It is absolutely superb!
6. Oven Baked Rice
My mouths waters just thinking about oven baked rice. I simply adore a nice and crispy rice casserole. The trick to making a great oven baked rice dish is to not be stingy with the oil. The rice swallows a lot of it, especially in the oven, so you need to add more than you would normally. Try to have it as rarely as possible, because it’s a quite high caloric dish because of all the oil.
5. Rice Soup
Who said that rice can’t be made into a delicious and hearty soup? Actually it is one of the best ways to cook rice. My favorite recipe for rice soup is the simplest recipe in the world: in a pressure cooker add one cup uncooked rice, two chopped tomatoes, two chopped carrots, one celery, one potato, half a cup of tomato juice, salt, pepper, three cups water and three tablespoons of extra virgin olive oil. Let it boil for 35 minutes (although 15 is more than enough to get everything cooked, if you leave it for 35 everything will be nice and juicy) and then serve it. It’s superb!
If I were to choose one single dish that I would have for the rest of my life, every day for breakfast, lunch and dinner, then risotto would be it. It’s so nice and smooth and cheesy. The addition of vermouth give it an unbelievable flavor and the best thing about it is that you can add pretty much anything you love to it. My favorite way to cook risotto is with asparagus. Damn it, now I have to make some to settle the beast!
3. Milk Rice
Milk Rice is a simple and delicious dish. You parboil the rice and then set it aside. Then you bring some cow’s milk or coconut milk to a boil and add the rice and some spices, such as cinnamon, cardamom and sugar. You serve it with jam or syrup or as it is. The recipe varies from country to country so it’s best you do a little online searching before you attempt it.
Mujaddara is basically a dish made with equal parts rice and lentils. It is served with caramelized onions and yogurt, but it is up to you to eat and serve it with whatever you want. The combination between rice and lentils is a fortunate one, because they complement each other and they both have the same cooking time. Our tip for a great mujaddara is to be careful and not make it too dry. There’s nothing worse than dry lentils in the kitchen!
1. Vegan Fried Rice
You got your boiled and cooled rice, so now it’s time to get busy with the vegetables. You can use any vegetable you like, but we suggest carrots, onions, broccoli, peppers and tofu. Use good extra virgin olive oil and a good soy sauce to get all the vegetables and rice flavored. Make sure to use high heat and a good wok!
